📍 RECIPE – RAYALASEEMA RAGI SANGATI (ANDHRA STYLE) 📍

Below quantity suffices 2 people.

Ingredients:
– Cooked Rice = 1/2 Cup = 60 gm (approx)
– Ragi Flour = 1 Cup = 120 gm (approx)
– Water = 2 Cups = 240 ml (approx)

Procedure:
– Boil Water
– Add Cooked Rice & boil for few minutes.
– Add Ragi Flour & Close the lid. Let it cook for few seconds.
– Open the lid & mix everything very well.
– Apply a bit of water to a plate & make Ragi Sangati balls.

📍 RECIPE – EGG PULUSU (ANDHRA STYLE) 📍

INGREDIENTS:
• Boiled Eggs (with cuts) = 4
• Onion = 1 big (finely chopped)
• Tomato = 1 medium (finely chopped)
• Green Mirchi = 4 (sliced vertical)
• Curry Leaves = handful
• Coriander Leaves = handful (finely chopped)
• Ginger = 1/2 Inch or 1 tsp (finely chopped)
• Tamarind = 1 Small Lemon Size soaked in 1 Cup of Water
• Oil = 1/4 Cup
• Jeera = 1 tsp
• Aavaalu = 1 tsp
• Menthi Powder = 1/4 tsp (Can use Methi Leaves if Menthi Powder not available)
• Salt = 1 tsp
• Red Chilly Powder = 2 tsp
• Turmeric Powder = 1/4 tsp

PROCESS:
• Heat Oil in Kadai
• Add [ Turmeric & boiled eggs ]
• Fry eggs & take them out
• Add [ Jeera + Aavaalu + Menthi Powder ] in same oil
• Add [ Green Chilly + Allam + Curry Leaves ]
• Mix Well
• Add [ Onion ]
• Mix Well
• Add [ Salt ]
• Fry till onions become translucent
• Add [ Tomato ]
• Fry till Tomato gets mushy
• Add [ Red Chilly Powder ]
• Mix Well
• Add [ Tamarind Water ]
• Mix Well
• Close lid and boil for few minutes
• Add [ eggs ]
• Boil for few minutes till desired consistency of pulusu.
• Taste & adjust SALT (1/4 tsp may be required)
• Add [ Coriander Leaves ]
